Probably my favorite use for leftover rotisserie chicken. This was the first time I tried eating it with zucchini noodles and baby spinach. I didn't cook the veggies at all and just let the hot broth cook everything for a few minutes. The noodles had a perfect al dente texture this way, just the way I like it.
Food p0rn mostly. I like to cook grain-free/gluten-free/low carb meals. If I get my act together, maybe I'll even link some of the recipes.

Thai Green Curry Chicken Soup with Zucchini Noodles

A "kitchen sink" soup
Made from leftover rotisserie chicken, leftover grilled corn, carrot tops (yes the green stuff) and various bits of this or that from my fridge and garden. Yum! :)
Leftover breakfast...yum!
Here's a breakfast I made with the previous night's leftovers. The leftovers were the steak and roasted beet/root veggies. I just added the fried egg and some fresh greens from my garden. Love it!
